This is our flagship bean/roast, not available at any other coffee-shop! Hailing directly from a family-owned co-op of small farmers in Columbia, we worked directly with these farmers to be able to bring you something truly special.

About the Coffee:

The Pink Borbon cherry varietal boasts a fruity flavor profile already, which is further accentuated by an anaerobic (without oxygen) co-fermentation with berries that takes place over a few days. Co-fermentation means that coffee ferments alongside these berries to yield an even fruitier flavor profile, and impart some of that berry goodness into your cup, while the anaerobic fermentation further breaks down the coffees sugars for a sweeter final cup.

The coffee is then naturally dried on raised beds for a couple weeks, carefully being tended to and checked for imperfections. This sun drying even further brings out those fruity flavors, which yields us with an absolute bomb of freshness and fruit, great for all types of brewing!
